Pho is a beloved Vietnamese noodle soup that has become a comfort food favorite worldwide. Originating in early 20th century Northern Vietnam, it was initially sold by street vendors and has since evolved into a national dish. Known for its aromatic broth and tender slices of beef or chicken, pho is a quintessential expression of Vietnamese culinary artistry and has warmed the hearts of people across all cultures.

For the broth
- 2 lbs beef bones
- 1 onion, halved
- 4-inch piece of ginger, sliced and crushed
- 3 quarts water
- 2 star anise

For the soup
- 8 oz rice noodles
- 1 lb beef sirloin, thinly sliced
- 1 onion, thinly sliced
- 1 bunch scallions, chopped
- 1 cup fresh bean sprouts
- 1 bunch fresh basil
- 1 bunch fresh cilantro
- 2-3 limes, cut into wedges

Step-by-Step Instructions
Step 1: Prepare the bones

Place the beef bones in a large pot and cover with cold water. Bring to a rapid boil for 10 minutes to remove impurities. Discard the water and rinse the bones thoroughly.
Step 2: Char the aromatics

Place the halved onion and ginger directly over a gas flame or under a broiler until they are charred and fragrant. Rinse them under cold water to remove any loose blackened bits.
Step 3: Simmer the broth

In a large pot, combine the cleaned bones, charred onion, and ginger with 3 quarts of water. Add the star anise, cloves, cinnamon, and salt. Simmer gently for 3 hours, skimming off any foam that rises to the surface.
Step 4: Season the broth

After 3 hours, add fish sauce to the broth. Taste and adjust seasoning with more salt or fish sauce if needed. Strain the broth through a fine sieve to remove solids.
Step 5: Prepare the noodles

In a large bowl, soak the rice noodles in hot water for about 15 minutes until soft. Drain and set aside.
Step 6: Assemble the soup

Divide the cooked noodles into serving bowls. Top with slices of raw beef and thinly sliced onions. Ladle the hot broth over the beef, cooking it instantly.
Step 7: Garnish and serve

Top each bowl with scallions, bean sprouts, basil, and cilantro. Add lime wedges and optional garnishes like hoisin and Sriracha sauce. Serve immediately and enjoy!
