A sandwich run on Benbrook Boulevard could soon come with a scoop on the side.
State records filed February 18, 2026, with the Texas Department of Licensing and Regulation indicate that the Jimmy John’s at 8512 Benbrook Blvd could be adding Baskin-Robbins to its existing space. The filing, listed under project number TABS2026012911, outlines an interior remodel of the current lease space.
Baskin-Robbins and Jimmy John’s share ownership under Atlanta-based Inspire Brands, which is backed by Roark Capital Group. The proposed addition would bring the well-known 31 flavors concept to this Benbrook location.
According to the state documents, construction is scheduled to begin on April 6 and is projected to wrap up on May 29, 2026, barring delays. The estimated project cost is $200,000. Icon Architects, Inc. of Mansfield is listed as the design firm.
As of publication, the listed owner and tenant have not responded to requests for confirmation.
For now, the information comes directly from public filings. If the plans move forward as outlined, Benbrook residents could soon pair their favorite sub with a scoop to match.
