The crew at the Benbrook Fire Department may be used to high heat, but that didn’t stop them from digging into a bowl of classic comfort.
This week, Lt. Nicholson served up a summertime surprise from the firehouse kitchen: chicken and dumplings. It’s the kind of meal that brings folks together, no matter the season.
Tender chicken, hearty veggies, rich broth, and biscuit-style dumplings made it a standout around the station table. The aroma alone could stop traffic on Winscott Road.
Simple ingredients, such as sautéed onions, garlic, and celery, form the base. Add in frozen peas and carrots, shredded chicken boiled in pollo seasoning, plus a generous splash of cream and broth. The magic comes when cut-up buttermilk biscuit dough is tossed in and simmered to perfection.
It’s a reminder that sometimes, the best meals come from the heart, not a cookbook.
